Who doesn’t like Chipotle?
Better question is, who wouldn’t want a warm home made meal after a long day on hospital service?
The other reason why I love this recipe is that it doesn’t take too long to make, and you can make a large amount and store it in the freezer!
So let’s get to it. Today we will be making Beef Barbacoa!
Before we begin, I must clearly state that I am not a chef. So please excuse my cooking skills, but I can promise you that this tastes amazing!
First, the meat. I use rump roast, cut into little squares, and washed well.
I also gather the other ingredients, which include vegetable oil, bay leaves, onions, salt, black pepper, and Sazon seasoning.
And of course, my handy dandy pressure cooker! If you want to know more about this awesome machine, read my Blog post “Cooking Quick”.
I use about 1 Tablespoon of vegetable oil, add the onion pieces and a few bay leaves (4-5 leaves) and let the onion brown just a tiny bit on medium heat.
I add the meat pieces, salt and pepper, 1/2 packet of the goya seasoning, and 11 cups of water. I assemble the pressure cooker and let it work its magic on medium high for 1 hour.
On to the sauce! This is the most important part, and it’s what gives the meat ALL THAT YUMMY CHIPOTLE FLAVOR!
The secret ingredient for this wonderful recipe is the Goya Chipotle Peppers in Adobo sauce. This.is.magical. Basically these are jalapeños which are dried by a smoking process. It gives the smoky taste and is very spicy! Beware.
Inside the can you will find actual whole peppers as well as the liquid sauce. I separate the two and put aside.
In a regular blender, I add 1/3 cup of the adobo sauce, 1 chipotle pepper (VERY SPICY!), 1 tablespoon of minced garlic, 1 tablespoon of cumin, 1 tablespoon of lemon juice, and a pinch of salt. We’ll come back to this in a minute.
Now let’s get back to our meat. Once it has finished cooking, here is what it will look like. Be careful when opening the pressure cooker.
I use 1 cup of this broth and add it to the sauce mixture in the blender.
This completes the sauce. Here is how it should look:
Next, remove the meat and shred it using a fork.
In a medium sized pot, add the sauce and shredded beef and keep it on medium heat for 3-5 minutes.
That’s it! The beef barbacoa is done!
